Polyphenols are widely distributed in fruits and vegetables, and their content varies with maturity: young apples contain roughly ten times the polyphenols of mature fruit. Crude apple polyphenols comprise chlorogenic acid, catechins, epicatechin, apple condensed tannins, phlorizin, phloretin and anthocyanins, and are regarded as an excellent natural antioxidant system.
