Description

Brazzein is a naturally occurring sweet protein extracted from the fruit of Thaumatococcus daniellii, a herbaceous plant native to West Africa. As one of the most potent natural sweeteners known, brazzein is approximately 2,000 times sweeter than sucrose on a weight basis, while containing zero calories. It features a clean, sugar‑like taste profile without bitter or metallic aftertaste, excellent pH and thermal stability, and is fully digestible into natural amino acids. Brazzein has obtained FDA GRAS status (SELF‑affirmed) and is widely used in food and beverage applications including reduced‑sugar products, functional beverages and dietary supplements.
