Chitinase is an extracellular complex enzyme that degrades chitin, with a molecular mass of about 30 kDa. cleaves chitin into oligomers of N-acetylglucosamine and chitin by endohydrolysis. Chitinase is a glycoprotein produced extracellularly mainly by plants, insects and microorganisms such as mycobacteria.

Applications
Chitinase breaks down chitin into oligomers of chitosan and N-acetylglucosamine by endohydrolysis, which is then recycled. It is also used to control plant pathogenic fungi.
